Agave syrup is a natural alternative to sugar and honey, known for its low glycemic index. It is derived from the core of the agave plant, called the piña, when the plant reaches 5-7 years of age.
The sap is extracted and then subjected to hydrolysis, a process that converts the carbohydrates into sugars over a specific period at controlled temperatures.
